Anyone got some good (easy for me) avocado breakfast ideas. I’ve got an abundance that all seem to be ripening at the same speed so will want eating.
I’ve tried mashed on whole grain toast, sliced with poached eggs, & baked with egg & cheese.
Not really sure what else to do with them, I could Google but here is better.
Do you like guacamole?
Smash them up with chopped onions, tomatoes, garlic, lime juice, cilantro, salt and pepper. Or you could just mix with a store bought salsa.

Can use as a dip for chips or topping on tacos or burritos or even a spread on a sandwich or burger, or in a cheese omelette.

What you don’t eat will keep in the refrigerator (in a sealed container) for a few days.
Oooh,Jello that sounds really tasty..haven't done any Gucamole since last time ;-),which would be 2 month ago.Like your take on how to make it,i sometime ad a can of Sandwich tuna.Tips for the GM not to get brown,ad cold fresh water on top of the GM.Emty the water before you use it,then ad more on top and put it back in the fridge..3-4 days no problem.Tip 2 is in Villa they have some HOT Mexican Salsa..excellent to ad to GM or Minced Beef.

Thank you Niggly for keeping this thread on track...Be happy..//Alfie..:-)

Niggles first attempt at a 3 egg, avocado & cheese omelette. Those bigass avocados are really too much, I prepared half thinking it would be okay but couldn’t fit it all in hence the additional slices on the side

Sunday is gravy day!

Image

Garden gravy (Mushroom, onion and bell peppers) over roasted potatoes.
A fried egg goes great on top of this, but I’m cutting back on eggs.
I made a big pan of this gravy and put in jars for later use. Goes well over rice, pasta, mashed potatoes or even just a piece of toast.

Sweet mango with natural yogurt & mulberry juice over ice

Image

I’m quite impressed with Mrs Ns forward thinking for the mangos. We had a glut of them a couple of months back so she sliced, diced & bagged portions then froze them. I got a bag out & left it for about an hour & it’s perfect to eat

A bowl of oatmeal for breakfast is great for your heath. :D
Oats are loaded with important vitamins, minerals and antioxidant plant compounds. Half a cup (78 grams) of dry oats contains:

Manganese: 191% of the RDI
Phosphorus: 41% of the RDI
Magnesium: 34% of the RDI
Copper: 24% of the RDI
Iron: 20% of the RDI
Zinc: 20% of the RDI
Folate: 11% of the RDI
Vitamin B1 (thiamin): 39% of the RDI
Vitamin B5 (pantothenic acid): 10% of the RDI
Smaller amounts of calcium, potassium, vitamin B6 (pyridoxine) and vitamin B3 (niacin)
This is coming 51 grams of carbs, 13 grams of protein, 5 grams of fat and 8 grams of fiber, but only 303 calories. https://www.healthline.com/nutrition/9- ... ITLE_HDR_2
